Chocolate Chip And Banana Muffins

Makes 6 large muffins

For The Muffins

  1. Preheat the oven to 180C/160C Fan
  2. Grease a large muffin tray
  3. Mash the bananas and set to one side
  4. In a mixing bowl, cream together the butter and sugar, then stir in the milk
  5. Beat the egg, and add this and the mashed bananas to the wet ingredients
  6. In a separate bowl, sift the baking powder and flour and add a pinch of salt
  7. Add the chopped chocolate chips and cocoa nibs to the dry ingredients, and then fold the wet ingredients into the dry ingredients
  8. Divide equally between the muffin tray cups
  9. Cook for 20 min or until a knife inserted in the center of a muffin comes out clean.
  10. Allow the muffins to cool slightly, but while still warm take a wooden spoon and press the handle of the spoon into the centre of the top of each muffin forming a deep well

For The Filling

  1. Set 6 of the dark chocolate buttons to one side
  2. Heat the cream until it is very hot, then pour over the remaining chocolate buttons
  3. Allow this to stand for 1 minute, then stir to form a smooth ganache
  4. Pour into a piping bag, and pipe the ganache into the centre of each muffin, filling each completely
