    100% chocolate provides a wonderful means to explore the flavour profiles of different farms, beans and terroir in an “unadulterated” form.

    Inside this box are four bars sourced from beans from all around the world – Peru, Brazil, Ecuador and a Blend of Madagascar and Colombia.

    First is a 100% bar from Original Beans which they describe as a ‘mighty dark cacao’. This  smooth chocolate has layers of delicate flavour. Once the first wave of rich cacao washes over your tongue, a silky chocolate with a floral sweetness emerges, giving rise to an almost perfumed profile, reminiscent of rose petals with a cut grass sweetness.

    Original Beans has sourced the beans for this dark chocolate from the Cusco Valley in the Peruvian Andes. Also known as the ‘Sacred Valley’ it is a stone’s throw from the Inca capital of Cusco and the ancient city of Machu Picchu.

    Then we’ve an Ecuadorean 100% bar crafted by Pump Street Chocolate in Suffolk. Chris, Rob and the Pump Street team have carefully roasted and conched these beans from Hacienda Limon and then added some cocoa butter to achieve a creamy melt.  So whilst the bar has strong vegetal and floral notes with an intense cocoa kick, the cocoa butter ensures one isn’t overwhelmed.

    Next is a 100% cacao bar from Jordi’s crafted from a blend of Colombian and Madagascan bean. This strong dark chocolate doesn’t shy from being immediately astringent and mouth puckering.  The texture is smooth, with an earthy and slightly smokey body. The powerful profile of this dark chocolate would pair perfectly with the tannins of a strong red wine, rum or whisky.

    Finally weve a Brazilian bar from Bertil Akesson. Whilst Akesson’s chocolate is perhaps known for its Madagascan cocoa beans – grown on Akesson’s own estates – this 101% bar is crafted from Brazilian cacao. The bar has been carefully crafted into an intense yet buttery 101% cocoa, the extra 1% is from the addition of cocoa nibs..

    With no added sugar, this bar has the intense and fruity flavour that we love in 100% bars. However the addition of a little extra cocoa butter to the perfectly roasted cacao, reduces any bitterness and mellow out the acidity to create a very approachable 100% cocoa bar.
