100% Club: Madagascar Edition
This is the proper stuff in unadulterated form. Aimed at the chocolate purist, these 100% bars are considered by many to be the holy grail of chocolate. Made from only two ingredients, pure cocoa solids and a little cocoa butter (nothing else) – the ingredients couldn’t be finer. The flavours, however, couldn’t be more complex.
The Madagascan’s are growers of fine fruity cocoa beans that lend their incredible intensity to this fine selection of chocolate bars. If you’re new to 100% chocolate, then the Madagascan bean makes an excellent starting point.
Typically sweeter than other varieties, the flavours aren’t as sharp. Start off with Pralus 100% bar, which although dark and mysterious is made softer on the palette, much like Bonnat’s 100% whose buttery mouthfeel eases you into layers of intense cacao. We could not have a Madagascan box without including a bar from Akesson’s. This 100% is bursting with berry notes and a natural sweetness. Finish with Bonnat for intense yet buttery tasting experience.
Then taste the 100% cacao bar from French maker Pralus. Initially this 100% is deceptively smooth and easy. The buttery richness quickly gives way to layer upon layer intense cocoa. Expect Pralus’ signature roasted profile when tasting this bar.
Next is a 100% from Menakao. A must-try for the 100% lovers. Menakao’s bar packs far more of a punch than Akesson’s and Pralus’ more mellow Madagascan 100% bars. This award winning dark bar is an intense 100% Madagascan dark chocolate. The bar has no sugar in it at all and is made with nothing but cacao, revealing all of the richness of the cocoa.
This bar doesn’t just taste good, it does good. Madagascan chocolate maker Menakao proudly crafts its chocolate on the island, using only local ingredients. Unfortunately, this is rare even for craft chocolate – it’s estimated that less than 5% of the world’s chocolate is produced in the same country the cocoa is grown. By making the chocolate in Madagascar in addition to growing the cacao on the island, Menakao generate about 4-5 times the benefit of Fair Trade for the local Madagascan economy.
Finally, we have the 100% cacao bar from Akesson’s. Cocoa grower Bertil Åkesson’s father was a Swedish diplomat before family eventually settled in Madagascar in the 1970s and established a number of cocoa and spice plantation. Bertil is one of the true heroes of the bean to bar market; over the last decade he pioneered the direct sale of his single estate beans to newly emerging chocolate makers.
Today bars made with his beans win prizes all over the world. Wonderful berry notes burst forth from this incredibly intense chocolate. A natural sweetness that you might not expect to find in a bar with such a high percentage of cacao.
So, for those nervous of bitter notes we recommend you try this 100% selection first.
