Alternative Milk Chocolate Collection
A collection of four craft milk chocolate bars with a twist. These bars are a fantastic way fora milk chocolate lover to make a lighter choice.
First from Marou is the Coconut Milk bar. This bar uses cocoa beans from Ben Tre, the southern coastal province ofVietnam’s Mekong Delta. The chocolate is made in Saigon by two French chocolate makers, Samuel Maruta and Vincent Mourou, with a small and dedicated local team that already makes an award winner dark chocolate barfrom Ben Tre and multiple other regions of Vietnam.
In 2015/6 after extensive requests, lobbying and indeed demands, Sam and Vincent, Marou’s founders (the name Marou is a combination of their family names) agreed to make a milk chocolate to complement their range of dark bars. Vietnam doesn’t have a large dairy tradition or history. ButVietnam does have a long history of coconut growing and harvesting, based around Ben Tre province. And so they decided to craft a coconut milk craft chocolate bar which out of the blocks won multiple international awards and became a firm favourite
To taste, we found the bar to have a deliciously rich and fugdy mouth feel. The coconut milk beautifully compliments the spicy flavour profile of theBen Tre cocoa by adding a fruity layer with added notes of raisin.
Next is Chocolat Madagascar’s intensely high cocoa solids milk chocolate. It is certainly more intense than a typical milk bar, but still has the characteristic creaminess of milk chocolate. This chocolate is an 80% milk chocolate, and yet bears next to no bitterness and is ever so creamy in the melt.
At Cocoa Runners, we are always a fan of Georgia Ramon’s milk chocolate. Georgia Ramon, whilst grinding and conching its chocolate to perfection, it would appear that its milk chocolate bars tend to bypass the conching process. We find this makes the milk flavour more prominent within the bars, thus making it taste just that little bit sweeter.
With cocoa sourced from Guatemala from the Cooperative Fedecovera Q’Eqchi Mayas farmers, the cacao has undergone a medium roast, followed by a 72 hour grind. By not being conched, this leads to a bar that is slightly grainy in texture, but still bursting with flavour. We found this bar to be lightly spicy, with hints of cardamon and a malted, biscuit like quality.
Finally, we present Jordi’s Sheep Milk 51%. Often referred to as the most nutritious milk, we love the unique taste of sheeps’ milk, and combined with Jordi’s knack for crafting amazing chocolate – this dark milk chocolate is definitely a must-try.
