This Ara Belize is a dark chocolate bar crafted in Paris. The cacao comes from plantations near Toledo in southern Belize and it is certified organic.
Andres and Sabrina are the couple who founded Ara. The pair are originally Venezuelan but then moved to Paris in order to introduce small-batch craft chocolate to the French. They are both vegan and so is all of their chocolate. Ara is the French for macaw, which is also the bird on their logo and packaging. They chose the colorful Latin American bird as symbol for their dedication to sustainable agriculture.
Andres is the actual chocolate maker. He worked as a pastry chef before discovering his passion for chocolate in its purest form. Before setting up shop in France, Andres spent three whole years working for the Franceschi family in Venezuela, learning not just about chocolate but also about cacao.
An incredibly rich, dense bar we found this reminded us of a chocolate fondant or mousse. We also noted some hints of toasted malt. Finally, rich treacle follows through as the bar melts away.
