This Ara Nicaragua Nugu is made exclusively using cacao from Nueva Guinea in Nicaragua. Ara crafts its chocolate in small batches with the simplest ingredients, in order to bring out the flavours of the bean.
Though originally from Venezuela, Ara founders Sabrina and Andres, have now settled in Paris. They hope to educated the French about craft chocolate and the aromas of different Central and Latin American cacaos. Thus they chose the name ‘Ara’ for the company. Ara is the French for Macaw, a bird native to many of the lush rainforests where cacao grows.
This bar uses cacao grown in a single region of Nicaragua. Ara sourced the beans through Ingemann who are one of the biggest cacao exporters in the country. Ingemann specialises in working with small farmers and helping them to sell their fine flavour cacao.
This is a vibrant dark chocolate, that hums with mixed fruits. First of all open the bar and inhale the pineapple-laced aroma. A good acidity mixes with the tropical fruits, leading to notes of lemon and orange. The has a almost sherbet edge swirled into the citrus.
