    It’s well known that the American Revolution started with a large tea party in Boston Harbour, but what’s perhaps less well known is the this tea party kick started the American love affair with chocolate. Demand for coffee and chocolate soared when many Americans gave up tea, and the race was on to determine which would be the new American drink of choice.

    Chocolate got off to a flying start – between 1768 and 1773, New England alone imported nearly two million pounds of “foreign” cocoa from the non-British West Indies. Thomas Jefferson believed that “by getting it [chocolate] good in quality, and cheap in price, the superiority of the article both for health and nourishment will soon give it the same preference over tea & coffee in America which it has in Spain.”.

    Over the past decade, the craft chocolate movement has truly blossomed in the USA.  American makers have embraced artisan chocolate with the same passion and enthusiasm that they had previously brought to the small batch revolutions in beer, coffee, olive oil and so more besides…

    US makers are well known among craft chocolate fans as champions of “two ingredient” dark chocolate, made without the addition of any extra cocoa butter.  Bars made in this way are less buttery than those made by many of their European counterparts, but have a bight quality, and a distinctive intensity beloved by those who like their bars to pack an extra punch.

    As well as crafting bars for dark chocolate aficionados, small batch makers in the US have brought a distinctly playful streak to the world of craft chocolate.  They produce of some of the world’s finest milk, white and flavoured bars, and have pioneered innovations such as TCHO’s addition of freeze dried ice cream to chocolate bars and Fruition’s creation of some of the first toasted white chocolate bars.

    And their efforts have been recognised and rewarded by the most influential chocolate awards bodies at both a national level, and in global competition.  At both the International Chocolate Awards and Academy of Chocolate Awards, American makers have excelled, setting a high standard for the rest of the world to aspire to.
