Chuao used to be revered as the pinnacle of cocoa origins, and it’s only since other locations have upped their game (and Venezuelan beans are becoming harder to source) that it now has to share the top spot. But don’t expect to be bowled over by intense flavours here, as that’s neither Bonnat’s style nor playing to the best of this fabulous bean. It’s a subtle profile, with a higher roast and nutty flavours accompanying the tropical fruits typical of the origin.
ABOUT THE MAKER
The Bonnat family has been making chocolate in Voiron, France, for over 130 years. It was current head Stephane’s parents, Raymond and Nicole Bonnat, who pioneered Bonnat’s first single-origin bars in the 1980s. Stephane has continued his parents’ proud tradition, now working with 35 different plantations worldwide to produce Bonnat’s world-famous chocolate.
