Sirene – Lachua, Guatemala 73% Dark
Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.
This bar has great length and a long melt that reveal at first floral notes followed by citrus and berry notes, with some hints of tea and woodiness
Qantu – Bagua, Peru, Dark 70%
When Maxime and Elfi first decided to delve into craft chocolate, they returned to where they first met, in Elfi’s home country of Peru. Starting off in Lima, they visited Salon du Chocolat to begin the process of creating relationships with different producers. They then went on to visit a number of farmers and co-operatives to find their perfect beans.
Like an ancient and mystical treasure, the Amazonian forest protected these unique cocoa beans growing in Bagua, Peru for centuries. Finally uncovered, the cacao gives off jasmine and orange blossom magical aromas combined with a gentle caramel finish that will delight your tastebuds.
