Chocolarder – Strawberry & Elderflower Truffles
It doesn’t get more local than this! Growing in Tregoniggie Woods – right on Chocolarder’s doorstep – it takes about one minute for the elderflower to get from tree to the factory. Once there, it’s washed and soaked with sugar to become elderflower syrup, then combined with Cornish strawberries and encased in a 72% dark chocolate shell.
Look out for a sweet burst of summer as the light strawberry dusting opens up to the elderflower sherbet and deep chocolate with a malty marzipan finish.
ABOUT THE MAKER
Chocolarder crafts its chocolate in Falmouth, Cornwall. Chocolarder’s exciting line of fine single-origin bars and delightfully innovative locally-inspired inclusions use only top quality ingredients that succeed in doing better for the environment and the communities at their source. The whole company has at its heart an ethos of “ethical transparency”. Mike Longman – founder and chocolate maker – is unwavering in his commitment to a truly transparent and sustainable production process, even to the point of transporting his beans to Falmouth by sailboat.
Mike sources these beans from Asháninka farmer co-operatives in the rainforests of Peru, with the help of environmental charity Cool Earth. The Asháninka are an indigenous people, living mostly in the Peruvian Amazon. Harvesting and selling cocoa beans provides them with a sustainable income, which is crucial to combat the challenges they face from illegal logging, mining and deforestation.
