TASTING NOTES
This milk bar has a profile full of nutty caramel and malted hints. An unusual inclusion gives mutedly heathery floral notes, and unmistakable aroma of coconut. The not quite smooth chocolate has an almost fudge-like texture, melting quickly on the tongue. This creation is a rich but palatable summery bar that is difficult to resist.
ABOUT THE MAKER
Chocolarder crafts its chocolate in Falmouth, Cornwall. Chocolarder’s exciting line of fine single-origin bars and delightfully innovative locally-inspired inclusions use only top quality ingredients that succeed in doing better for the environment and the communities at their source. The whole company has at its heart an ethos of “ethical transparency”. Mike Longman – founder and chocolate maker – is unwavering in his commitment to a truly transparent and sustainable production process, even to the point of transporting his beans to Falmouth by sailboat.
THE BEANS
The beans for this bar are sourced from Öko Caribe, a prominent cocoa supplier in the Dominican Republic and one of the most popular in the world. The two owners, Adriano de Jesus Rodriguez and Gualberto Acebey Torrejon, maintain close relationships with their farmers, often giving out loans for family emergencies and community needs. They also educate their farmers about sustainable land management and environmental responsibility, and pay consistent premiums for the farmers’ award-winning cocoa.

This was a real surprise! A lovely toasted coconut flavour, slightly nutty, very ‘full’ and fudge-like. Would definitely treat someone to a bar of this!
