The beans for this bar have somewhat of a revered provenance, with highly prized Trinitario cacao sourced from Bertil Åkesson’s celebrated Ambanja estate in the heart of the cacao producing region of the Sambirano Valley, northern Madagascar.
You’re likely to recognise this maker from the vibrant presentation in unique designs that has become its trademark. Edinburgh based Chocolate Tree is one of only a handful of bean-to-bar chocolate producers in the UK, and in the short time that they’ve been perfecting their craft, they’ve produced some of the best chocolate in the world. Founders Alastair and Friederike Gower began to venture into the world of chocolate by crafting sweet treats from organic couvertures that they sold touring music festivals from a hand-built, solar powered geodesic dome tent! But this wasn’t enough for this courageous couple, and in 2012 they crafted their first batch of bean-to-bar chocolate. Today you can visit Chocolate Tree’s café and shop in Edinburgh, stocked with delicious treats created in their small kitchen and factory located just a few miles away.

I thought this had a slightly grainy texture, but it also released quite delicate flavours.
