Friis Holm – Indio Rojo (Guatemala), 70% Dark
Here, the flavour complexity of the Indio Rojo beans are the star of the show. This bar offers hints of lilac and rose, which then evolve into a honeyed finish.
Chocolarder – Wild Gorse Flower
This milk bar has a profile full of nutty caramel and malted hints. An unusual inclusion gives mutedly heathery floral notes, and unmistakable aroma of coconut. The not quite smooth chocolate has an almost fudge-like texture, melting quickly on the tongue. This creation is a rich but palatable summery bar that is difficult to resist.
Omnom – Spiced White and Caramel, 38% White
Onto its smooth white chocolate, Omnom has on grated fresh orange peel, and swirled in a handful of malt, cinnamon and crisp pieces of caramel. The result is a richly spiced bar with a texture that combines creamy chocolate and satisfying crunch.
Chocolate Tree – Whisky Nibs 70%
Small pieces of roasted nibs give the bar a gentle crunch. We noted hints of peat and woodsmoke as well as sharper notes on the finish.
Dormouse – Gaura Estate, Indonesia Dark 70%
This 75% dark Mancunian bar, made from Indonesian beans, has a clean, rich, and fruity flavour profile with none of the smokiness typically associated with Indonesian cocoa. Reminiscent of caramelised fruit, it has notes of spice honey on the finish.
