The Maker

Sue and Tomoko are the pair behind Feitoria do Cacao. They are based near Porto in Portugal. They do every step of the chocolate making in process by hand, crafting bars in micro-batches. The very reason behind Feitoria do Cacao started with Tomoko Suga and Sue Tavares having taken a trip to São Tomé and Principe. In São Tomé and Principe, the pair visited cocoa plantations and learned of the harvesting and post-harvest practices involved in the cultivation of cacao. It seems only natural Feitoria do Cacao would eventually craft chocolate made using beans from this origin.

Tasting notes

This 72% dark chocolate is fruity and intense, with the flakes of salt adding a touch of the sea and slight added sweetness.
