Some could say Pablo Spaull fell into the chocolate industry by accident after an illustrious (and ongoing) career as a DJ. After trying a bar of unroasted chocolate at a friend’s birthday party, he discovered a passion for artisan chocolate which lead him on a journey to founding his own chocolate company in 2011.
Pablo has chosen not to roast his Peruvian beans, giving the chocolate a distinctive green note, reminiscent of fresh cut grass.
This is a dark chocolate bar that takes you on a journey as the layers melt away. At first there is an intense, dark aroma and a creamy texture. As this melts away, the buttery flavour remains, but the bar takes on a slightly crumbly texture. Hints of buttered asparagus prevail.
