This 58% dark milk chocolate has a rich profile with intense milk and deep cocoa flavours. The texture is biscuit-like, yet the bar is able to produce an ever so enigmatic creamy mouthfeel.
ABOUT THE MAKER
Georgia Ramon was founded in 2015 by renowned pâtissier Georg Bernadini and his partner, Ramona Gustmann, to be a craft chocolate maker, shop, and café dedicated to producing the highest-quality handmade chocolate. Georg began his career as an apprentice confectioner in 1984, before going on to work as head pâtissier at the Michelin-starred Les Jardins de l’Opéra in Toulouse. Based in Siegburg, near Bonn, Georg has also used his extensive experience to write Chocolate – The Reference Standard, a comprehensive 920-page overview of the world of artisan chocolate makers.
The cocoa for this bar was sourced from Produits des Iles SA (PISA), a central fermentery established in northern Haiti in 2012. PISA works with 1,104 small-scale farmers – 492 of whom are women – to pay premium prices for the unprocessed cocoa harvest and then processing it centrally, allowing farmers to earn more money for their quality beans.

Strong contender for best chocolate I've ever had. Very subtle salted caramel flavours
