This bar has been crafted simply from Nicaraguan Rugoso Cacao (a Trinitario variant) and cane sugar. Grown amid the hills and jungles of the province of Matagalpa in central Nicaragua, beans are sourced from a cooperative of four hundred growers. Lapa-Lapa’s commitment to coaxing the unique flavour profiles of the very best of remarkable Nicaraguan cacao varieties begins at the farm, with growers expertly sorting the different genetic varieties grown so that each variety can be fermented in a different way in order to highlight their unique flavour profiles. Bars contain just two ingredients, cacao and sugar (with the addition of cocoa butter where necessary), with flavours released and highlighted through the fermentation and drying processes alone which vary in accordance with bean variety. Indeed, Lapa-Lapa’s diligence pays off with in its truly remarkable single origin chocolate.
