ABOUT THE MAKER
Trevor Smith, Australian car repairman and entrepreneurial patissier, established Metiisto in Sweden in 2012. After winning numerous awards for his bean-to-bar chocolate, Trevor decided to close down Metiisto’s operations to focus on his family. A long vacation to Australia inspired Trevor to return to his home country, where he reopened Metiisto’s operations in Toowoomba, Queensland, in 2018.
THE BEANS
The beans in this bar are sourced from Cathliro, a grower-centric fermentery and drier on Guadalcanal, Solomon Islands. Cathliro works with over 200 farmers across the islands, buying their wet cocoa for a guaranteed price before fermenting and sun-drying the beans in the capital of Honiara. This bar was made from beans grown by the farmers of the Black Post village, giving it a lightly fruity and floral profile.
