Metiisto – Tenaru 67% Dark Chocolate
From car repair, to entrepreneurial patissier, Trevor Smith’s Metiisto Artisan Chocolate story started in 2012, in a small town of Falun in Sweden.
After crafting bean to bar chocolate, and winning numerous awards, Metiisto decided to close down its operations to focus on family. For a long vacation, Trevor returned to his home country of Australia, a stay which sparked a desire to move back to Australia. This move revived Metiisto, where Trevor reopened the chocolate operation in Toowoomba, Queensland in 2018.
Now located in the pacific region, Metiisto now sources its cacao from neighbouring countries, including the Solomon Islands.
For this bar, Metiisto has sourced its cocoa from Tenaru in the northern bay of the Solomon islands. The cacao is nurtured by a farmers co-operative, Cathliro Enterprise in Guadalcanal.
This 67% dark chocolate is on the slightly sweeter side of dark chocolate, with a complementary fudgy texture. Expect an initial bright sour burst, which develops and harmonises into plums and stoned fruit dipped in chocolate. Then comes through subtle notes of orange blossom and a wave of beautifully floral and nutty flavours. The finishing flavour rounds into a perfectly chocolatey finish.
