It has an intense treacly taste, a bit like Golden Syrup. This is mixed in with subtle fruity notes, particularly hints of raspberry, giving a well-rounded flavour that marks this milk out and demonstrates how Morin has coaxed out the flavour of the bean.
The cacao comes from the Ben Tre region of the Mekong Delta in the south of Vietnam. Morin has sourced the beans from Vietcacao. The co-operative works with small family farms in the region. It focuses helping farmers to improve the harvest and to prioritise the quality of their cacao (over quantity). VietCacao take the wet beans to a nearby fermentation centre that is located in a school for disabled young people that is a designated “Work Assistance Center” which aims to provide jobs for, and reintegrate into society, these young handicapped adults.
