TASTING NOTES
This 50% milk chocolate combines hints of mixed fruits with a deeper undertone. At first, strawberry notes blend with double cream, before more chocolatey notes develop along with sweet hints of mushroom and, finally, a little touch of lemon.
ABOUT THE MAKER
Chocolate Naive was founded by Domantas Užpalis in 2011 with the belief that only the best ingredients in the world are capable of making great chocolate. Naive has close relationships with all of its suppliers, visiting each of them at least once a year. They must be committed to sustainable growing practices and strong environmental management, for which they are rewarded by payment at least 40% above the market price.
THE BEANS
This bar is part of Naive’s Forager Collection. Head chocolate maker Domantas Užpalis describes the concept as “experimental and multilayered”. In order to create this range of bars, Domantas wanted to start from scratch, deconstructing and reconsidering every individual ingredient he uses. As the name Forager suggests, each bar harnesses the bold flavours of locally-sourced Lithuanian ingredients to open up and enhance Naive’s Bolivian cacao.
Kefir is a fermented milk that is part of Lithuania’s ancient culinary tradition. The secrets of making kefir are passed down from generation to generation. Kefir is high in probiotics, live bacteria and yeast cultures that promote a healthy gut.

Really amazing, and also difficult to describe. The kefir gives the chocolate a slight tanginess, but also a vaguely herbal note? A more refined version of milk chocolate for sure — recommended if you want something complex and interesting.
