Description
TASTING NOTES
This 75% dark chocolate from Naive is fudgy in texture with a tangy creaminess and an almost tobacco-like aftertaste, atypical of Madagascan cacao.
ABOUT THE MAKER
Chocolate Naive was founded by Domantas Užpalis in 2011 with the belief that only the best ingredients in the world are capable of making great chocolate. Naive has close relationships with all of its suppliers, visiting each of them at least once a year. They must be committed to sustainable growing practices and strong environmental management, for which they are rewarded by payment at least 40% above the market price.
THE BEANS
The beans in this bar are a blend from the upper and lower regions of the Sambirano Valley in Madagascar. It consists of beans very different from typical Madagascan cacao, bringing a tangy, creamy, almost tobacco-like aftertaste instead of the expected Madagascan fruitiness. They were sourced from Sambirano SA, a family-run business established in 1997 dedicated to bringing high-quality Madagascan cocoa and vanilla to market, supporting women and youth organisations, and ensuring their farmers are paid a fair price for their produce.
This bar was featured in our November subscription box. You can hear what Spencer and Mika had to say about it in the video below:
