This dark chocolate bar uses cacao beans from Ecuador, a little sugar and nothing else. It was crafted directly from the beanby Palette de Bine in Mont-Tremblant, Québec.
As the name suggests, the cacao used in this chocolate bar comes Camino Verde. This is a farm near the city of of Balao and is owned by Vicente Norero.
Not only is the farm certified organic it has a strong commitment to social responsibility. The farmers earn above average wages, receive bonuses and in addition have access to training and regular medical check-ups. The farm mostly grows Arriba Nacional cacao. Thought to be native to Ecuador, the variety has ‘fine flavour’ status and so is much in demand.
Tasting Notes
Ecuadorian cacao often has strong flavours, which have further brought out here thanks to the high percentage. Some fruit as well as vegetal notes accompany pleasant tannins.
