Pump Street has used organic cocoa beans from Bertil Akesson’s Madagascan estate to craft this white chocolate bar.
Good white chocolate uses one part of the cacao: cocoa butter, the natural fat present in the bean. Pump Street hand sorts and roasts the cacao before using a cocoa press to (quite literally) press the cocoa butter from the beans. To this Pump Street has added a dash of milk, a little sugar and nothing else.
The Madgascan cocoa butter brings a touch of fruit and vanilla to the milky chocolate. The bar has a pleasing freshness, reminiscent of newly-churned cream. A touch of chocolate smoke on the finish.
