TASTING NOTES

Rye Crumb is an intriguing inclusion. It gives the chocolate a sharp crunch and distinctive toasted taste that works incredibly well with the salt, which in turn cuts beautifully through the rich milk chocolate. This Rye Crumb bar proved a stern rival for our affections to Pump Street’s Sourdough & Sea Salt bar.

ABOUT THE MAKER

After a long and successful career at IBM, international jet-setter Chris Brennan briefly retired before deciding to pioneer the making of sourdough and other breads in his idyllic countryside bakery in Orford, Suffolk. About a decade later, he and his daughter Joanna decided to delve into crafting award-winning chocolate in their eponymous bakery situated on Pump Street, and have won numerous awards for both their chocolates and their innovative packaging.

THE BEANS

The beans in this bar are Heirloom Designated Arriba Nacional beans, grown on Samuel Von Rutte’s Hacienda Limon estate in the Guayas Basin, Ecuador. Unusually, Samuel pre-dries the cocoa seeds before fermentation, which reduces both acidity and bitterness and contributes to their rich and nutty caramel profile.

    I loved this, it’s a combination that makes sense, the umami, the slight crackling (not as much as crunch), the delicious milk chocolate.

    Nice chocolate and the rye crumbs add interesting texture but there are more interesting bars out there.

    I fist tasted this with group of chocolates promoted by Annalise Barbieri of the Observer and thought it absolutely magic with a crunchy mix in the chocolate. So I bought this bar for my birthday treat. After now being a chocolate “expert” after a couple of months of trying real chocolate, I find that the grittiness of the chocolate is no longer to my taste, and probably won’t buy it again. I don’t want to write this off, but my taste now prefers the chocolate without the additions.

    Starts with the chocolate tase then a subtle
    taste of the bread comes through when it melts
    You are left with a taste of the sea salt .
    Nice packaging and resealable. An enjoyable bar .

    A perfectly solid bar, the chocolate was of a reasonable standard. However it was saved from mediocrity by the wonderful breadcrumbs. They added crunch and oddly enough made some of the flavours more evident. Overall a yummy bar but somewhat plain.
