A new addition, this dark chocolate is yet another fantastic bar from Orford’s Pump Street Bakery. This is Pump Street’s first (and to date only) bar with beans from Honduras.
As you take the bar out of Pump Street’s award-winning packaging you are met with an delicious smell full of chocolate and yeasty notes. The light coloured chocolate has a delicate flavour and not even a hint of bitterness. We were so surprised by how mellow and sweet the bar was, we had to double check the percentage.
The chocolate seems to almost have been infused by the aromas of the bakery. The smooth chocolate is full of sweet buttery flavours and caramelised currants. The bar reminded us of a toasted tea cake or thickly buttered slice of burnt toast.
The bar is made using the 2015 crop of beans from the Finca Tres Marías estate. This is family owned plantation located in the mountains of Northwest Honduras. The farm was originally a cattle ranch, but the family have branched out planting a range of different crops – from plantains to allspice. With the help of the Honduran Agricultural Research Foundation they have become the first cacao farm in the area.
This Pump Street Bakery Honduras bar won silver at the Academy of Chocolate Awards 2015.
