Description
Raaka steams its Peruvian cacao nibs over California Cabernet, infusing them with the wine’s aromatic and bright vapours. The result? A dark chocolate that has an intensely juicy raisin-like flavour profile, akin to both Cabernet Sauvignon and Peruvian cocoa.
Raaka is a Brooklyn based chocolate maker that focuses on social responsibility as much as great taste.
Founder Ryan Cheney discovered chocolate while on holiday in Thailand. Excited by the flavours of lightly roasted chocolate, he started Raaka to explore low-temperature chocolate making in an ethical way. After a year of experimentation, Ryan teamed up with musician and gastronomist Nate Hodge to develop Raaka’s unique range of “Virgin Chocolate”.
Raaka is dedicated to making “uncommonly delicious chocolate” crafted from unroasted cacao beans, capturing the brighter, bolder, and fruitier notes of cacao. Raaka sources its cacao from farmers and growers it foremost trusts and admires.
The cacao, once reached Raaka’s hands, is not roasted, which is the way Raaka actively processes its cocoa beans and chocolate. Raaka loves the bold, bright, and fruitier flavour of unroasted cacao beans.
This 68% dark chocolate has a bold fruity flavour, with a lightly tannic finish. The texture is slight grainy, with a long lasting melt.
