This Indonesian bar has a fantastic melt into a main woody, wine-like body. Hints of sherbet and whiskey come in before a lightly smoky finish.
ABOUT THE MAKER
Ruket founders Alessandro and Marco have always loved food and been fascinated by traditional, artisanal production. Their discovery of craft chocolate happened almost by accident, when Marco wanted to use the best possible chocolate in his ice cream parlour. They started experimenting with bean-to-bar chocolate, and quickly decided that this chocolate was much more than just an ingredient: it was something to be shared with the world.
The beans in this bar are sourced from the Gaura Estate on the island of West Sumba, Indonesia. This 815-hectare family farm has a strong history of cocoa production, and their beans were recognised with a Cocoa of Excellence Award in 2015. The farm currently employs around 60 full-time staff, who live on the plantation and have access to a free school for their children and their own land for growing food.
