    Crafted on the Isle of Wight, the cocoa beans for this dark chocolate bar were transported from the Dominican Republic on board the Tres Hombres. This traditional wooden sailing boat has no engine but relies on the wind and the waves (to be specific the currents) to deliver its delicious cargo across the world. As a result, this bar is not only Fairtrade but almost carbon neutral as well. The beans are sourced from Conacado, a registered Fairtrade cooperative in the Dominican Republic, that is used by number of other makers including Soma, Taza and Omnom.

    Seaforth uses large stone grinders to grind its beans, giving the bar a slightly coarse texture, which is a world away from the buttery consistency of Blanxart’s Dominican bar. For this bar Abe at Seaforth has replaced cane sugar with coconut nectar sugar. Slightly less sweet, the coconut sugar has a subtler flavour that works well in this high percentage dark chocolate.

    While the bar still has the richness of flavour so typical of Dominican cacao, the bar has a much fruitier profile. Floral citrus notes of lime and bergamot, are blended with tropical fruits. We detected hints of slightly under ripe banana, whose green sweetness is a perfect match for the coconut sugar.
