Sirene’s Taylor Kennedy has delved deep into the Bolivian rainforest to source these cocoa beans. The rare cacao grows wild in the depths of the Amazon River basin and to reach them is a serious undertaking. Once you taste the fruit of Taylor’s labours however, you’ll know it was worth the trek.
The initial melt is very smooth thanks to a buttery texture. Rich chocolatey flavours have a slightly muddy edge. A spiced note lurks beneath and in turn gives way to coffee and an intriguing chalky note. A surprisingly dry finish for a bar that starts so creamy. This is a masterful and complex bar.
Sirene describes the dark chocolate as having a ‘ hint of the feral’ but we think it has more the aroma of adventure. A must try for anyone on a voyage of cacao discovery.
