This an intriguing and layered Dominican dark. The bar was crafted in Devon from unroasted Hispaniola beans.
Solkiki describe this bar as like a Lapsang Souchong tea and we agree. The bar has distinctive smoked flavour but without the strong savoury notes of Papuan smokey chocolate. Instead the bar retains some of the chocolatey notes that we have some to associated with Dominican cacao. A thick and creamy texture further adds to the bar’s richness. A green note to finish adds more depth.
This final flavour is typical of unroasted chocolate. These bars are generally dominated by earthy green notes which unusually are not very present in Solkiki’s bar.
Solkiki buy the beans for this bar direct from a collective of 182 farmers associations in the Dominican Republic. Most of these farms are only about 1km in size. These family-farms grow cacao alongside other native fruits such as bananas and avocados. Not only do these provide food and income, the taller trees provide a canopy that protects the sensitive cacao plants.

Powerful, dark and raw, yet not at all bitter. This bar has a very distinct smokey taste, which might be unlike any other chocolate you have tasted before. But combined with the earthy floral notes present here make this is a delicious and unique tasting experience.
