British artisan maker have crafted this dark chocolate from Ecuadorian Arriba Nacional beans.
Earthy notes have a green freshness that reminded us of cut grass and morning dew. A secondary gentle spice with a green pepper edge emerges. Hints of pineapple and coconut develop and blend with the bar’s creamy texture.
On second tasting we noticed the bar’s spice more: the pepper was mixed with cloves and mace. One of the joys of craft bars is that at each tasting, different flavours can reveal themselves in different combinations.
The cacao comes from the Los Rios province of Ecuador and has a similar notes to Pacari’s bar of the same origin but with a spicy twist.
