The taste of Soma’s bar is unmistakable. At first bite you are transported to Papua New Guinea, where the cocoa beans are laid out in the open air. The heat and smoke from nearby wood fires are helping to dry the cocoa beans and remove any excess moisture before they are packed and shipped to makers around the world (in the case of Soma, Canada).
Eating this bar is the sensory equivalent of walking through a haze of fragrant wood smoke. The bar’s aroma is full of citrus and berry mixed with yet more smoke. Notes of sharp red fruits come through in the bar, but the overall profile is dominated by smoke, giving the chocolate an unusual charcoal quality. Just like the air around a bonfire, the found the flavour of the bar caught in the back of our throat.
Despite its intensity, the bar is not nearly as savoury as Omnom’s Papuan bar. The dark chocolate is surprisingly sweet with a smooth creamy texture. The thin pieces melt beautifully on the tongue, rapidly releasing the smoke trapped inside.
While the bar might not be to everyone’s taste, we encourage the more adventurous chocolate aficionado to give it a try.
