The name says it all, this dark bar from Toronto-based Soma has an unusual smokey aroma. Wood fires are used to remove moisture and dry the beans (in sunnier places the beans are dried simply by lying them out in the sun).
As with the other bars in Soma’s Black Science collection, this a smooth textured dark with a beautiful melt. The creamy mouthfeel and smoked flavours blend beautifully in this interesting but still indulgent dark.
Soma describes the bar as having ‘interesting smoked ham notes’ – an intriguing description that is just right (although we assure you no animals were harmed in the making of this chocolate). The hints of wood smoke are unmistakable, but they don’t overwhelm. Instead of the intensely savoury experience of Omnom’s Papua New Guinea bar the chocolate has a more delicate, sweet flavour. We detected light citrus notes with an earthy undertone.
The beans come from Vanuatu in the South Pacific. The archipelago is home to some of the oldest cocoa trees in the region. These were planted in the late 19th century by a mix of European settlers (including British subjects from Australia and French settlers).
