  • Description

Think lemon, bread, cherries, balsamic vinegar, brownies, green bananas. So basically all the delicious flavours found in a well-balanced chocolate. Expect Soma’s classic creamy melt too.

As Annalisa Barbieri wrote in her Notes on Chocolate column for the Guardian:

“[It] is from a family-owned farm in Ecuador where limes, oranges, papaya and bananas are grown among the cocoa (it reduces land erosion). This has a superb snap and – honestly – I got notes of banana.”

Cynthia and David are the couple behind SOMA. Their clear-minded focus and commitment to working only with the finest beans has earned SOMA a formidable reputation amongst craft chocolate lovers. SOMA now has a number of outlets across Toronto, and if you’re ever visiting the city we would highly recommend a visit to one of their shops. Not only can you enjoy a delicious drinking chocolate in winter or a creamy ice cream in summer, you can also buy SOMA’s filled chocolates. These are only available locally but are talked about around the world for their creative combinations of ingredients, and quirky takes on current food trends.

Costa Esmeraldas is a single estate cacao farm owned by the Salazar family on the northwest coast of Ecuador. The steep 100-hectare site is planted with Nacional-Venezolano Amarillo cacao. The pods are transported daily during harvest, beans meticulously fermented and sun-dried at their brand new post-harvest facility close to the farm.
