One of Japan’s pioneering chocolatiers, Koji Tshuchiya, is the man behind the Japanese chocolate maker Theobroma Cacao. Theobroma Cacao is the second chocolate maker from Japan to enter our Library. With Japan being a country seldom associated with chocolate, surprisingly, it is also a country that has over 130 chocolate makers.
Crafted from white cacao beans grown in the Chiapas region of Mexico, Koji has visited the farm and observed the quality of the beans before turning them into craft chocolate bars.
These bars are made from beans that were harvested in 2017, and have been roasted at low temperatures in Theobroma Cacao’s factory.
This Mexican 70% dark chocolate bar is wild and lively with its flavour profile. It is bright with acidity, with lower, warmer notes of toffee and popcorn. The finish is distinctly liquorice.
