TASTING NOTES
This gorgeous dark bar, made entirely in Colombia, has a fantastically complex flavour profile. Fruity-sweet with hints of banana and hazelnut, the dominant flavours are a unique combination of citrusy lemon melting into rich coffee. The folks at Tibitó have truly outdone themselves with this fantastic example of the stunning depths of flavour one can find in well-treated cocoa beans.
ABOUT THE MAKER
Tibitó was founded to celebrate the astonishing variety of flavours and aromas in Colombian cacao. The beans for each bar are sourced from a different province of Colombia, then hand-crafted at their central factory in Bogotá. This bar is made from beans grown in Tumaco, a south-western province on the border with Ecuador known for its hot and humid climate. Blessed with bountiful rivers and heavy rainfall, tropical jungles and mangrove forests flourish, bringing with them the extraordinary diversity of plants that helps to give cocoa beans such complexity of flavour.

A slow melt. A complex flavour. I tasted nuts, spices and foamy banana sweeties. Bit of a spiced biscuit taste and also macadamia nut oil. Sweet and light in colour for a 70%. The flavour is intense and this is an interesting bar however, it is not to my liking. I would recommend trying this however, as it is unlike anything I’ve tasted before.
The moulding of the bar is also nice- rounded, as opposed to square-edged, blocks of chocolate.
