ABOUT THE MAKER
Deanna Tilston launched Tosier in Suffolk in 2017 as part of her personal journey to learn about and craft great-quality chocolate. This endeavour has turned into an award-winning chocolate maker dedicated to giving farmers a fair price as part of a transparent and traceable supply chain. Tosier’s chocolate is made in twenty-four-kilogram batches, allowing Deanna to keep a close eye on each step of the chocolate-making process. It also means that no batch of chocolate Deanna makes will ever be quite the same; each batch and harvest that Tosier receives has different characteristics. We think this variety is part of the beauty of craft chocolate.
THE BEANS
The cocoa beans in this bar are sourced from Cacao de Colombia, an organisation that has worked with three community cooperatives in the coastal Tumaco region to educate farmers and introduce centralised fermenting and drying of their beans. Because of their intervention, farmers in the region today earn 70% more from their cacao than they did selling to the mass commodity market.
The coffee beans are also from Colombia, only eight hours drive from the cocoa. This is a special chocolate bar – Colombian single origin twice over!

Here’s what Annalisa Barbieri, columnist at the guardian thought: “Tosier chocolate is classy, clean but absolutely full of flavour. Coffee and chocolate is an obvious marriage but it’s often hard to get right. I would keep a bar of this permanently in my office if I could: it’s just so perfectly balanced and remains the best dark coffee chocolate I’ve ever tasted.”
