This bar is host to a bundle of taste sensations, floral notes come through in the shape of jasmine alongside a fruity edge resembling plum. The flavours are softened with light vanilla undertones.
ABOUT THE MAKER
Paco Llopis, the founder of Utopick, lived his childhood above the kitchens of his family’s patisserie – the perfect setting for experimentation and inspiration. He soon turned his attention to chocolate, eventually becoming a master chocolatier in some of Europe’s most prestigious restaurants and chocolateries. Paco’s mission is to create the best and most surprising chocolates that have ever been. With his wife, designer Juana Rojas, he has created an extraordinary range of single-origin chocolate bars, all wrapped up beneath an exquisite origami boat reminiscent of the Spanish voyages that brought cacao to Europe in the sixteenth century.
THE BEANS
The cacao for this bar is sourced from the Philippines – in the south of the country there is a farming cooperative named Paquibato where the cultivation and post-harvest process take place. This region produces five varieties of trinitario beans. The beans are characterised by a profile of yellow and tropical fruits with a nutty finish.
