Zotter is an Austrian bean to bar chocolate maker with a penchant for the wacky. But at the heart of the chocolate is where and how this chocolate maker sources its cacao – it is always directly from co-operatives and individual farmers.
This 72% dark chocolate is made with fine flavour beans from Para, Brazil. This region is where Josef Zotter’s daughter, Julia, spent an entire summer with a family of cocoa farmers. Here she worked with them, learning the ins and outs of cocoa cultivation.
For this Brazilian dark bar, expect an aroma reminiscent of the winter months, with gingerbread and dried fruits. The flavour lingers almonds, banana, and floral notes, amongst a rich chocolatey body. With Zotter’s signature smooth and glossy texture and melt, the chocolate finishes with a cherry tartness.
