Sea Salt Topped Chocolate Brownies

Method
- Step 1Preheat the oven the 180C/160C fan
- Step 2Line a 18cm x 18cm brownie tin with greaseproof paper and then lightly grease the paper
- Step 3Sieve the flour and cocoa powder into a large mixing bowl
- Step 4Chop the cooking chocolate buttons and add these and the fine salt to the mixing bowl
- Step 5Combine the dry ingredients, make a well in the middle of the bowl and set to one side
- Step 6Set a pan on the hob over a medium heat and melt the butter, taking care not to let it brown.
- Step 7Remove from the heat and allow to cool slightly
- Step 8Crack the eggs into a small bowl and whisk
- Step 9Pour the eggs and butter into the well in the mixing bowl, and mix thoroughly
- Step 10Carefully pour the batter into the brownie tin and bake in the centre of the oven for 20 minutes
- Step 11When fully cooked through, remove from the oven and sprinkle with the flaked sea salt
- Step 12Cut and serve when cooled

Ingredients
- 2 tablespoons Cocoa powder
- 25g 63% Madagascan cooking chocolate
- 75g self raising flour
- 75g unsalted butter (room temp, cubed)
- 1/2 tsp fine sea salt
- 1/2 tsp flaked salt
- 2 medium eggs
- 200g sugar
