This Chocolate Tree Whisky Nibs won Scotland Food and Drink Product of the year 2017. Chocolate Tree has hand-crafted the bar from Maranon beans, grown in the foothills of the Andes. It has then soaked some of the cacao nibs used to make this bar separately in Scottish single malt whisky from Islay.

Raaka Bourbon Cask Aged

An intense, earthy unroasted chocolate with some complex floral notes and the distinctive bourbon flavour. But this chocolate does not actually contain alcohol. Instead, the flavour is developed by ageing the cocoa nibs in used bourbon casks, prior to them being made into chocolate.

Zotter – Cognac and Coffee

This dark chocolate ganache, infused with cognac, has a balanced and intense flavour with notes of roasted coffee on the finish. This inspired Zotter’s next move, which was to coat the ganache in a fine layer of coffee couverture, followed by another layer of dark chocolate.

Jordi’s – 67% Dark Chocolate with Nibs

This 67% dark chocolate is loaded with cocoa nibs (roasted pieces of cocoa bean) for a delicious crunch, and has a deep, spicy flavour with notes of rum and whiskey (even though there’s no actual alcohol in it).

Öko Caribe’s beans are dried next to open fires, which explains the subtle smoky notes of this rich 70% dark chocolate bar. The bar has strong cocoa aromas, with hints of ripe red fruits. We also picked up earthy hints, with some vegetal and alcoholic notes. No actual alcohol in this bar.

 

 

Ruket - PISA, Haiti, Dark 65% with Chartreuse

This moreish, lower-percentage dark bar has a fantastically boozy and vegetal flavour profile with a fabulous Chartreuse finish.
