Chocolate Chip And Banana Muffins

Method

  • Step 1Preheat the oven to 180C/160C Fan
  • Step 2Grease a large muffin tray
  • Step 3Mash the bananas and set to one side
  • Step 4In a mixing bowl, cream together the butter and sugar, then stir in the milk
  • Step 5Beat the egg, and add this and the mashed bananas to the wet ingredients
  • Step 6In a separate bowl, sift the baking powder and flour and add a pinch of salt
  • Step 7Add the chopped chocolate chips and cocoa nibs to the dry ingredients, and then fold the wet ingredients into the dry ingredients
  • Step 8Divide equally between the muffin tray cups
  • Step 9Cook for 20 min or until a knife inserted in the center of a muffin comes out clean.
  • Step 10Allow the muffins to cool slightly, but while still warm take a wooden spoon and press the handle of the spoon into the centre of the top of each muffin forming a deep well
  • Step 11Set 6 of the dark chocolate buttons to one side
  • Step 12Heat the cream until it is very hot, then pour over the remaining chocolate buttons
  • Step 13Allow this to stand for 1 minute, then stir to form a smooth ganache
  • Step 14Pour into a piping bag, and pipe the ganache into the centre of each muffin, filling each completely

  • 2 Very Ripe Bananas
  • 1 large egg
  • 180g flour
  • 90g caster sugar
  • 50g unsalted butter (at room temperature)
  • 50ml milk
  • 50g milk chocolate buttons, chopped
  • 50g cocoa nibs
  • A pinch of salt
  • 1 tsp baking powder
  • For the filling
  • 60ml double cream
  • 100g dark chocolate buttons
