ABOUT THE COFFEE
A surprisingly fruity offering from Timor-Leste with this clean, natural coffee. This natural lot of Hybrid Timor, Moka and Typica has been hand-sorted after flotation, before being transported to raised beds with regular turning. This is two-stage process, with the final drying taking place at lower altitudes with higher temperatures.
ABOUT THE MAKER
Founders Maxwell and Lesley’s coffee journey began in Melbourne, Australia in 2008, after discovering an underground movement called ‘Third-Wave coffee’. Captivated by the flavour and provenance-driven approach to coffee, the pair decided to take a leap of faith and dove into the movement head first. Driven by the opportunity to learn and innovate at a time when people were beginning to think of coffee in a different light, Maxwell and Lesley opened the destination coffee shop Colonna & Small’s in Bath, UK in 2008. Since, the pair have launched their very own roastery, meticulously brewing and presenting their coffee all over the world.
ABOUT THE BEANS
Collected from producers across the many succos (small villages) of the Atsabe sub-region of Timor-Leste, the Atsabe lots are a culmination of work beginning in 2018. With the construction of easy-to-reach washing stations for these remotely-located communities, hubs have grown for the sharing of information and expertise between producers in the subsequent years.
