Founders Maxwell and Lesley’s coffee journey began in Melbourne, Australia in 2008, after discovering an underground movement called ‘Third-Wave coffee’. Captivated by the flavour and provenance-driven approach to coffee, the pair decided to take a leap of faith and dove into the movement head first. Driven by the opportunity to learn and innovate at a time when people were beginning to think of coffee in a different light, Maxwell and Lesley opened the destination coffee shop Colonna & Small’s in Bath, UK in 2008. Since, the pair have launched their very own roastery, meticulously brewing and presenting their coffee all over the world.
ABOUT THE BEANS
Resting high on the western slopes of the Cordillera mountains, overlooking the beautiful Cauca river valley, El Zacatin has become a beacon of exceptional specialty coffee in the Antioquia region of Colombia.
Perhaps the most traditional coffee producing department of Colombia, Antioquia runs alongside the steep mountains of the Andes, with all sizes of farm dotted across the landscape, from small plots to large estates. Many producers still use traditional methods, like the transport of coffee via mule and only planting the varieties developed for the region by the Colombian Coffee Growers Federation. In recent years however, a number of farmers have implemented new systems, with wet mills and the latest agronomic innovations being installed.The family-owned seventeen hectare farm is now in its third generation, with Eduardo Fernandez-Restrepo the current proud caretaker. Pursuing a clear vision over the last five years, he has brought the quality of the farm’s crop to a truly outstanding level. Over this time Eduardo’s charismatic personality and interest in non-traditional coffee tree varieties has connected him with like-minded producers, leading to the exchange of both farming knowledge and seeds.
