This unique cultivar has a very unique profile, with malty, almost ruby-ale like characteristics underpinning a juicy acidity in the cup.


Founders Maxwell and Lesley’s coffee journey began in Melbourne, Australia in 2008, after discovering an underground movement called ‘Third-Wave coffee’. Captivated by the flavour and provenance-driven approach to coffee, the pair decided to take a leap of faith and dove into the movement head first. Driven by the opportunity to learn and innovate at a time when people were beginning to think of coffee in a different light, Maxwell and Lesley opened the destination coffee shop Colonna & Small’s in Bath, UK in 2008. Since, the pair have launched their very own roastery, meticulously brewing and presenting their coffee all over the world.


The Aquiares Estate, a “land between rivers”, is more commonly referred to as a coffee community — established in 1890 it is now the largest farm in Costa Rica and currently home to around 1800 people. Officially verified as fully carbon-neutral and devoted to the protection of its biological corridors, the farm is a beacon for sustainable agriculture within the industry. The farm is also famous for its innovative approach to specialty crop cultivation — this Anaerobic Natural H1 Centroamericano F1 is a unique hybrid of Sarchimor T-5296 and a wild Rume Sudan variety.
