About the box

This box is designed to showcase the wonderful cacao produced by the Maya Mountain cooperative in Belize.

At the moment, there are tragic wildfires raging across Belize, and these fires are already encroaching onto the farms from where many craft chocolate makers source their Maya Mountain beans. Sadly, the farmers are pretty much on their own to fight these wild fires, there is little government support and the rains aren’t due for a few more weeks.

Emily Stone has set up a GoFund Me, and we’ll be donating 10% of sales of this special Maya Mountain Box and any bar crafted with beans from Belize until the end of March 2024.

About Maya Mountain

Maya Mountain Cacao (MMC) was the first project to facilitate the production of speciality-grade cocoa from Belize. MMC source beans grown by smallholders and centralise their post-harvest production (including fermentation and drying), marketing and exportation.

MMC was founded in 2010, led by Emily Stone of Uncommon Cacao. Today they source from over 400 smallholders, purchasing wet cacao and taking it to a central facility for fermentation and drying. This allows smallholders to focus on the quality of their trees. In turn, this centralisation provides them with market stability, convenience and price fairness. As the fermentation and drying processes are the most crucial when it comes to flavour development, centralisation helps to create consistency.
