Print / PDFNaive – Ecuador Rough Ground Dark Chocolate Bar
Inspired by the Mesoamericans, Naive have taken Ecuadorian cacao beans, ground them ‘roughly’ with sugar crystals to produce this Rough Ground 75% dark chocolate. The style is rustic, unrefined, it has a gritty texture, yet the flavour is delicate: floral and slightly nutty.
Taza Chocolate – Mexicano Cacao Puro
It wouldn’t be a stone ground chocolate list without Taza! These discs are made of 70% single origin Dominican dark chocolate, bursting with bold, wine-like flavour, accompanied by Taza’s signature gritty texture. Taza tell us that this is the “purest expression” of their proudly unrefined chocolate. We enjoyed the delicious, fruity notes. This is an unusual chocolate that is very easy to munch!
Mike & Becky – Öko Caribe, Dominican Republic, Dark 70%
This unusual and surprising bar uses Hispaniola Trinitario beans from La Gina in the Dominican Republic, but ground for only 12 hours, instead of three days. The result is a slightly grainy chocolate, which is less processed and more intense.
Öko Caribe’s beans are dried next to open fires, which explains the subtle smoky notes of this rich 70% dark chocolate bar. The bar has strong cocoa aromas, with hints of ripe red fruits.
Taza Chocolate – Mexicano Cinnamon
We love this cinnamon, 50% dark version for its gently warming flavour that always leaves us wanting more. This is a particular favourite on a cold winter’s evening.
Forever Cacao - Peru, Dark 80%, Raw (Unroasted)
The beans for this bar are sourced from Peru, and are stone-ground.
Forever Cacao’s signature bar is an unroasted bar (the beans are never roasted or heated above 42 degrees) and has typical green notes. Less typically, this bar has punchy fruit flavours that burst through.
Taza Chocolate - Mexicano Super Dark 85%
In these super dark 85% disks, the result of stone-grinding with just two ingredients is an intensely chocolatey and richly flavoured bar that is more sweet than bitter, showcasing the bold flavours of the beans.
Qantu - Freestyle! Rough Ground, Dark 65%
This rough-ground 65% dark bar was inspired by Qantu’s cacao sourcing trips. Qantu wanted to share the beans in their most raw, pure and aromatic form, so this chocolate is minimally roasted and ground.
