Some of the greatest chocolate in the world is crafted in Scotland. From the Clyde to the Forth and then further north, passionate craft chocolate makers are producing excellent flavours in exquisite bars. Of course, there's no cacao trees to be found growing in Scottish soil, but cocoa beans from all across the world find their way here to be transformed into some of the best bars on Earth. Here is just a small selection of some of the Scottish chocolates we're proud to host in our library. Based in Glasgow, Lara and Cameron of Bare Bones Chocolate craft some of the world’s most exquisite chocolate. This bar is among their most popular; a caramelly and nutty profile, brought alive with a pinch of salt for added complexity.
Chocolate Tree - Chililique, Peru, 50% milk
Over in Dunbar, Chocolate Tree is another maker, with a lot of experience crafting fine chocolate. Since 2005, Alastair and Friederike have been sourcing cacao chiefly from South American origins, and turning it into vibrant chocolate bars. This dark milk bar is made with Chililique beans from Peru; a great example of balancing bright, tart, berry-like notes from cocoa beans with rich, sweet, creaminess from milk.
Ocelot - Virunga, DRC, 70% dark with black cherry
Ocelot Chocolate are among the newest makers to our collection. Matt and Ish met in Glasgow, were originally based in Edinburgh, and they’ve now moved to Dundee, where they create curious and compelling flavoured chocolate, mainly with cocoa beans from Virunga in the Democratic Republic of Congo. This bar is a great example of how chocolate crafting can push the envelope of flavour, using black cherries to infuse tart and fragrant notes into the profile.
Bare Bones - Paquibato, Philippines, 70% dark
Described by The Observer’s chocolate correspondent as “the best dark chocolate I’ve ever sampled“, this extraordinarily flavoursome dark bar shows how rich and complex cacao can be, and the technical skill involved in revealing it. With award-winning cocoa beans grown in Paquibato in The Philippines, Bare Bones have coaxed forth flavours which take the experience of dark chocolate to new heights.
Chocolate Tree - Belize Black, 100%
This bar is one of our most popular 100% bars. Belize is a very special cocoa origin, with bold flavours, and Chocolate Tree have harnessed this to create something which is balanced and profound.
Ocelot - Yuna, Dominican Republic, 34% white with salty almonds
To finish this list, a white chocolate for those who are partial. Ocelot here have taken what is already a great white chocolate, with Dominican Republic cocoa butter, and tweaked the complexity with a sprinkling of salted almonds.
