Chocolate Tree – Peru Chililique Dark Milk 50%
The Chocolate Tree Peruvian Chililique 50% milk bar uses cacao grown in a remote mountain valley of Northern Peru. Ali and Friederike Gower behind Chocolate Tree have an undeniably close relationship with CacaoTales. The pair have worked together to source the beans for their Chililique bar. CacaoTales work directly with the cocoa farmers, and because most of the farms are fairly small, CacaoTales take care of fermentation and drying centrally. This means that the farmers have more time to spend cultivating the fine cacao trees. It also makes it easier to guarantee consistency in the post-harvest practices.
This 50% dark milk chocolate has quite the unique and interesting flavour profile. Chocolate Tree have coaxed out the acidic and bright notes out of the Chililique cacao, and harmonised it with the creaminess and sweetness of the milk and sugar. The bar has an almost juicy quality, like tart berries bursting in your mouth.
