This 50% dark milk chocolate has a unique and interesting flavour profile. Chocolate Tree has coaxed out the acidic and bright notes out of the Chililique cacao, and harmonised it with the creaminess and sweetness of the milk and sugar. The bar has an almost juicy quality, like tart berries bursting in your mouth.
ABOUT THE MAKER
Chocolate Tree’s Peruvian Chililique 50% milk bar uses cocoa beans grown in a remote mountain valley of northern Peru. Ali and Friederike Gower, the founders of Chocolate Tree, have an extremely close relationship with their supplier, CacaoTales. CacaoTales works directly with smallholder cocoa farmers, taking care of the tricky steps of fermentation and drying. This means that farmers have more time to spend cultivating fine-flavour cocoa trees, and the consistency and quality possible with centralised processing allows them to sell their beans for higher prices.
